Sparkling Pomegranate Margarita Mocktail

The classic margarita is perfect. Not one thing wrong with it! But that doesn’t mean you shouldn’t play around with a classic every now and again. And since pomegranates will be coming into season soon and your tacos will STILL need that perfect margarita pairing, I’ve created this Sparkling Pomegranate Margarita (Mocktail)!

Mocktail?

Yes, friends, I know some of you will tell me that it’s not a margarita without the tequila. I hear you. I somewhat agree, but sometimes you need a good beverage that is sans alcohol. It’s true! And this is a delightful beverage you can proudly serve at any party. It’s beautiful, fun and flavorful!

Pomegranate in My Margarita?

Yes, adding pomegranate juice to your margarita is fabulous and you will like it. Why? First because it adds such a gorgeous pinkish-red hue to it. Beyond that, it provides a delightful hit of bitterness and sweetness, which is perfectly accentuated when paired with fresh lime juice. Any taco would proudly sit next to this festive, refreshing margarita cocktail!

Sample, anyone?

If you happen to live in Chicago and are around town this weekend, you’ll want to stop by Taco Fest up on Southport avenue! It’s an amazing event where you eat a bunch of TACOS! Yup, pretty fantastic! And even more exciting, I’ve partnered with lululemon (right on Southport) to sample out this yummy beverage! So, once you’ve filled your belly with tacos, swing by lululemon, buy some fun clothes and sample this Sparkling Pomegranate Margarita Mocktail!

Need More Pomegranate?

Me too! Not only is pomegranate juice delicious and amazingly nutritious, but the arils (the little seeds inside the pomegranate) inside are too! And the options on ways to use them is seriously limitless. I love to reduce pomegranate juice and turn into a thick syrup to pour over yogurt or stir into tea. The arils are the perfect addition to oatmeal and even a topper for toast. And since you’re craving pomegranate, check out my recipes for these Avocado Pomegranate Toastettes and my Warm, Chai-Spiced Pom-Apple Cider!

Ingredients

Scale
  • 1 lime

  • 2 tablespoons fresh lime juice
  • 1/2 cup pomegranate juice
  • 1 1/2 cups lime-flavored sparkling water + extra for finishing

Instructions

  1. Cut off one end of the lime and use it to run along the rim of glasses. Dip the rims in the salt and set aside. Slice the remaining part of the lime into thin rounds and reserve for garnish.
  2. To a measuring cup or pitcher, add the lime juice, pomegranate juice and water. Stir to combine.
  3. Fill glasses with ice then top with margarita. Garnish with slices of lime and finish with a splash of sparkling water.

Notes

For an adult twist, omit sparkling water and replace with 1 cup champagne or sparkling wine and add 1/4 cup tequila.
