Rocky Road Brownies

If someone asked me what my favorite dessert is, I would not hesitate one bit with my answer. I would 100% say it’s a brownie. If you’re a chocolate lover like me, it’s pretty hard to top a really awesome brownie. Something about that chocolatey-chewy goodness makes me so incredibly happy. And while I love a solid, traditional brownie, I also love any twist on the classic. So yeah, how about a Rocky Road Brownie? Yep, that sounds good.

Brownie-spiration

What’s my inspiration? Or more precisely, what’s my brownie-spiration? Usually all of my food creations are inspired by a longing for that particular flavor combination. Weird? Maybe. But, it sure is a fun way to cure a craving. So this brownie was born out of a desire for that classic ice cream combination of nuts plus marshmallows plus chocolate. What’s not to love?

Wait, Aren’t You a Dietitian?

Yep, I sure am. And frankly, the stigma that dietitians don’t like or eat dessert is just plain silly. Especially when it comes to this dietitian. Because first, and foremost, I love food. I sure do. And dessert is one of life’s great pleasures. And yes, there was a time when I tried to make my desserts “healthier,” but then I wondered why the heck I was doing that. For me, I want the full-on dessert. I don’t want avocado brownies or chickpea cookie batter. How about we just eat dessert and enjoy it? So I do. I enjoy my sweet treats and indulge…without going crazy. And that makes me happy. You do YOU! 🙂

It’s a Rocky Road

Life is a rocky road. Am I right? Perhaps that’s why that ice cream flavor was created? My guess is no, but it’s pretty poetic. At least in food terms. My advice is this. Enjoy the bumps along the way. They make you stronger and give you character. Enjoy your ride on that rocky road and why not enjoy a Rocky Road Brownie while you’re at it!

Rocky Road Brownies

Ingredients

For the Brownies

  • 3/4 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 6 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup whole wheat flour
  • 1/4 cup mini chocolate chips

For the Rocky Road Topping

  • 1 cup mini marshmallows
  • 1/4 cup peanuts, chopped
  • 1/4 cup mini chocolate chips

Instructions

  1. Preheat the oven to 350’F and line a brownie pan with parchment paper.
  2. In a medium bowl, whisk together the sugar, cocoa powder and salt. Stream in the melted butter and whisk to combine. Stir in the vanilla extract and eggs. Add the flour and stir until just mixed. Gently fold in the chocolate chips.
  3. Pour batter into prepared pan and bake for 20-22 minutes.
  4. Remove brownies from the oven and scatter marshmallow, peanuts and mini chocolate chips over the top. If desired, place pan under the broiler briefly to toast the marshmallows.
  5. Cool in pan before removing and slicing.
