Looking for a flavorful dinner that comes together FAST? Look no further than this Sriracha Peanut Naan Pizza!


Ingredients

For the Cilantro Oil

  • 1/2 cup cilantro leaves and stems, plus more for garnish
  • 3 tablespoons olive oil
  • 1 tablespoon water
  • 1 clove garlic

For the Sriracha Peanut Sauce

  • 1/4 cup creamy natural peanut butter
  • 1 tablespoon sriracha
  • 1 teaspoon soy sauce
  • 1 tablespoon lime juice

For the Pizza

  • 1 cup cooked garbanzo beans
  • 1/8 teaspoon salt
  • 2 whole wheat naan
  • 1/2 cup shredded carrot
  • 1/2 cup red bell pepper slices
  • 1/2 cup shredded Monterey jack cheese (or other similar cheese)
  • 12 tablespoons chopped peanuts

Instructions

For the Cilantro Oil

  1. In a blender or bowl of a small food processor, combine the cilantro, olive oil, water and garlic. Puree until smooth. Transfer to a bowl.

For the Sriracha Peanut Sauce

  1. Clean out blender or food processor, then add the peanut butter, sriracha, soy sauce, and lime juice. Puree until smooth. Set aside.

For the Pizza

  1. Preheat the oven to 400’F.
  2. Place naan on a baking sheet and bake 3 minutes.
  3. Remove naan from the oven, then drizzle each lightly with half of the cilantro mixture.
  4. In a small bowl, smash garbanzo beans with the back of a fork. Stir in salt then spread smashed beans on top of each naan. Top with carrot, bell peppers and cheese. Return to oven and bake 5-8 more minutes.
  5. Remove from oven, slice as desired then drizzle with remaining cilantro mixture. Garnish with peanut dressing, cilantro and chopped peanuts.

Notes

Any extra sauce can be used for salads or noodle dishes!
