Toasted Coconut Cupcakes

Can I offer you a cupcake? Really, can I? Of course I know I can’t physically hand you one, but I sure would love to. Because cupcakes make people happy and I want to make sure you’re happy! So how about a recipe for Toasted Coconut Cupcakes? My little gift of joy to you!

Because I’m Happy

What makes you happy? Go ahead, tell me! Perhaps some Toasted Coconut Cupcakes? Ha! Well, I’m sure there are plenty of things, right? Me too! But do you know what makes me most happy? Hearing my daughter laugh, watching my daughter run and play, and receiving a bounty of hugs and kisses from her. I thought I knew all about happiness before my daughter came into my life, but it turns out, I didn’t.

 I Am The Face Of Infertility

There was a time when I never thought I would know the happiness I know now. As many of you know, my husband and I struggled with infertility. We spent days, months, years trying to have a baby and it seemed like the deck was stacked against us. Then, a miracle. A real miracle – our daughter conceived during a time when we were at our rock bottom. That moment, when I found out she existed was happiness like I never knew. And I’m crying as I write this – because THAT is happiness, pure raw, joy!

Honoring My Little Sous Chef

So in honor of National Infertility Awareness Week, I am celebrating my miracle, aka My Little Sous Chef.  She’s got a sweet tooth just like her momma and there’s nothing she loves more than a cupcake! I crafted this Toasted Coconut Cupcake for her. Can you believe she loves coconut? So cool, right? Turns out these are a hit and I’m incredibly happy to share the recipe with you!

Toasted Coconut Cupcakes

Ingredients

For the Cupcakes:

  • 3/4 cup (180 grams) all purpose flour
  • 1/2 teaspoon kosher salt
  • 2 teaspoons baking powder
  • 1/2 cup light coconut milk
  • 1 teaspoon vanilla extract
  • 4 ounces butter, room temperature
  • 2/3 cup (134 grams) granulated sugar
  • 2 large eggs, room temperature

For the Toasted Coconut Frosting

  • 4 ounces butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon salt
  • 12 tablespoons milk
  • 1/31/2 cup coconut flakes, toasted

Instructions

For the Cupcakes:

  1. Preheat the oven to 350’F and line a muffin tin with paper liners.
  2. Combine the flour, salt and baking powder in a bowl. In separate, smaller bowl, combine the coconut milk and vanilla.
  3. In a large bowl or in the bowl of a stand mixer, beat the butter on high speed until creamy and smooth, occasionally scraping down the sides of the bowl, for about 2 minutes. Gradually add the sugar and beat until fluffy, about 2 minutes. Add eggs, one at a time, beating well after each addition. Add 1/3 of the flour mixture, beat well. Add 1/3 of the coconut mixture and beat well. Repeat the process with remaining flour and coconut milk.
  4. Fill muffin cups about 3/4 full. Bake for 18-22 minutes or until golden and toothpick inserted in the center of the muffin comes out clean.
  5. Cool in the pan for 10 minutes, then remove from the pan and allow to finish cooling on a wire rack. Cool completely before icing.

For the Toasted Coconut Frosting

  1. In large bowl or the bowl of a stand mixer, beat the butter until smooth and creamy, about 2 minutes. Add the powdered sugar, 1/2 cup at a time, mixing well between each addition. Add the vanilla and salt. Then add the milk as needed to achieve desired consistency.
  2. Frost cupcakes and then top with toasted coconut.
