This Fresh Pineapple Salsa is LEGIT and you need to make it now! 👇 

WHAT YOU NEED:
1 1/2 cups finely diced pineapple
1/4 cup diced red onion
1/2 green bell pepper, diced
1/2 jalapeño, finely diced
1/2 cup cilantro, roughly chopped
1 lime, zest & juice

WHAT YOU DO:
Mix it all together. 😆

This. Is. Me. Un-showered, dirt under my fingern This. Is. Me. 

Un-showered, dirt under my fingernails, cookin’ up some eggs on a little butane burner sitting on a wobbly, tiny-a$$ metal table...LIVIN’ THE DREAM!

This summer was annoying, but also epic. I don’t need to explain why it was annoying. But it was epic because I got to do 2 things that I love 1) camping with my fam and 2) cooking al fresco!

As I’m sure is true of you, 2020 has made me realize a lot about myself and about the world. I’ve got goals to be a better human. And I’ve got goals to keep it real and relatable! 

So take me as I am! Because this year I’m going to do more posts of stuff that I love. Like me making a fool of myself (not hard to capture that) and yep, LOTS of food. Join me for the ride, will you?

Sunday breakfast inspiration! When I was a culina Sunday breakfast inspiration!

When I was a culinary intern, the chef where I worked decided to teach me how to make crepes one day.

The first thing he told me was to find a blender. And I was like, “come again? A blender?”

Something so fancy and French gets made in a blender? But the blender was and I still believe is the best tool for the job - perfectly combing the batter.

The VERY important key though, you MUST rest the batter for at least an hour before cooking. This relaxes the gluten and gets rid of some of those pesky air bubbles. 

Want to give crepes a try? Just remember this simple ratio (by weight): 2 parts milk, 2 parts egg and 1 part flour.  Go ahead and add a bit of salt (1/2 tsp) and a little oil or butter (3-4 Tbsps) too.

Then it’s up to you what to fill them with!!!! YUM!

It’s so much more than a smoothie.

It’s a step in moving forward. A goal I’m setting for myself to be a better human. A pause for reflection. A recognition that we’re not okay, but we’re working on it.

This smoothie is a big deal. #contest Because for each smoothie made, @pomwonderful will donate $100 dollars to @diversifydietetics, a nonprofit that increases the racial and ethnic diversity in the field of nutrition by empowering nutrition leaders of color.

Pom-Mandarin Creamsicle Smoothie

Serves 2

•1/4 cup almond milk (or any plant or dairy milk)
•1/4 cup Pom Wonderful 100% Pomegranate Juice
•1/2 cup pomegranate arils
•2 pitted dates, chopped
•2 mandarin oranges, peeled
•1 frozen banana
•1 teaspoon vanilla extract
•1/2 cup ice

Place all ingredients in a blender in the order listed and blend until smooth.
