You can do a lot of cool stuff with chickpeas. Which is great, because I personally love their meaty texture and neutral flavor. My new infatuation is turning them into a sort of mash or “salad.” It makes for a satisfying meal that can be enjoyed in so many ways! Introducing, my Chickpea Artichoke Salad!
I love soup. I love it more than a person probably should. To me, it’s a pretty perfect food. But only, and I mean ONLY, if it’s done right. In other words, no whimpy soup for me. Give me texture, give me flavor and give me satisfaction. Give me this Veggie Lentil Soup!
Summer always makes me think of BLT’s. Red, juicy tomatoes piled on toasted bread with bacon, lettuce and mayo. Such a classic and so good. I still love that classic, but you know me, I’m always in the mood to experiment with food! So yeah, I did that and made these Avocado BLT’s wtih Basil Mayo!
