I’m a big fan of breakfast food. Such a big fan that I’ll eat it any time of day. Lunch? Yes! Dinner? Absolutely? Snack time? Um, YES! And while I love almost all breakfast foods, waffles have always been my favorite! Especially the homemade kind. And I’m currently in love with these Buttermilk Whole Wheat Waffles!
Bored with your breakfast?
Well, so are my friends over at the Recipe Redux. Hence, the theme of this month’s challenge to break out of “breakfast boredom.” Uh oh, so you’re telling me my sprouted whole grain toast with peanut butter and jam that I have every. single. day. is boring? Perhaps, but I love it.
I simply love waffles.
Yes, they are my favorite breakfast food. I grew up eating a certain brand of frozen waffles and always felt like they were such a treat whenever they showed up on my plate in the morning.
Why I made this recipe:
I don’t know. Seriously, I don’t. I’ve already made my fair share of pumpkin recipes, so I should just stop. But. I. Just. Can’t. Stop!
Why I love this recipe:
Ahem, because I clearly love pumpkin. And I wanted to bake. And I wanted to bake pumpkin bread. That’s it.
