Avocado BLT’s with Basil Mayo

Summer always makes me think of BLT’s. Red, juicy tomatoes piled on toasted bread with bacon, lettuce and mayo. Such a classic and so good. I still love that classic, but you know me, I’m always in the mood to experiment with food! So yeah, I did that and made these Avocado BLT’s wtih Basil Mayo!

Easy Modifications Mix Things Up

As I mentioned above, I love the flavors of the classic BLT, but sometimes, I need to play with my food. Literally and figuratively. Part of that playing involves tiny modifications that don’t require much effort, but can change the flavor in a new, fun way. And it’s crazy that by just making those tiny changes, you feel like you’re eating something different. I love that!

Avocado BLT’s with Basil Mayo

Nothing complicated here. Simply take some fresh basil and blend it with fresh garlic, lemon and mayo and bam – you’ve got basil mayo. It will take you all of 2 minutes to do it. And you’ll be glad that you did. Then add some creamy avocado to that sandwich and yep, you’ll be in heaven.

Avocado BLT’s with Basil Mayo

Description

Your BLT just got even more delicious with the addition of avocado and basil-infused mayonnaise! Prediction that dinner tonight will be Avocado BLT’s with Basil Mayo!


Ingredients

Scale
  • 2 cups loosely packed basil, divided
  • 1 clove garlic
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon freshly cracked black pepper
  • ½ teaspoon lemon zest
  • 1 teaspoon lemon juice 
  • ¼ cup olive oil mayonnaise
  • 8 slices whole-grain or sourdough bread, toasted*
  • 1 ripe avocado, sliced
  • 8 slices center-cut bacon, cooked
  • 1 large, ripe tomato, thinly sliced
  • 8 large leaves of lettuce (romaine works well)

Instructions

  1. Slice 1 cup of the basil then place it in a small food processor along with the garlic, salt, pepper, lemon zest, lemon juice and mayo. Pulse until combined. 
  2. Spread mayo over toasted slices of bread. Arrange avocado, bacon, tomato, remaining basil and lettuce on four of the slices. Cover with remaining bread slices.

Notes

*You can also serve these as open-faced sandwiches as I’ve got pictured above! 🙂

*Feel free use turkey bacon instead of pork bacon, if interested
