Less Work, More Play
I love that the theme this month for the Recipe Redux encouraged us to find a way to use the slow cooker to make something yummy. They must know how much summer means to me! I love being outside, the extra hours of daylight and running in the grass! And while you know I love cooking, I don’t necessarily want to spend a gorgeous summer day doing it. That’s why the slow cooker is seriously my best buddy. My little 12 year old generic crockpot allows me to enjoy summer to it’s fullest. And if I could, I would give it hug for allowing me to do that!
Default Meat
What a weird way to separate these paragraphs, right? Ha! Well, I had to think of something catchy, and that seemed to work. Anyway, now that you know that I love my slow cooker, you’re probably wondering what I love to cook in it. While so many things work well in my old beast, my default food of choice is chicken. It’s a blank canvas that just melts in the slow cooker. That means I can have fun playing and experimenting. And that I do!
6 Ingredient Slow Cooker Poblano Chicken
Aha! I got you with those 6 ingredients, didn’t I? Sound too good to be true? Nope, not all! Only 6 ingredients (not counting water, salt and pepper – come on, those don’t count!) and just a teeny tiny bit of work on your part and this delicious meal is YOURS! Wait, did I say work? Um, yes, I did. Don’t get mad at me. It’s just a super tiny amount and I promise it won’t be hard! Don’t believe me? Check out the recipe below!
6 Ingredient Slow Cooker Poblano Chicken
- Yield: 8 servings 1x
Description
Dinner made EASY! Let this 6 Ingredient Slow Cooker Poblano Chicken be the answer to the question, “What’s for dinner?”
Ingredients
- 1/2 white or yellow onion, large dice
- 2 poblano peppers, seeded and diced
- 2 cloves garlic, peeled
- 1 tablespoon olive oil
- 1 (4 ounce) can diced green chiles
- 2 pounds boneless, skinless chicken breast (or a mixture of breasts and thighs)
Instructions
- Position rack in oven 6 inches from the heating element and preheat the broiler.
- To a large bowl, add the onion, poblano and garlic. Add the oil and toss to combine. Season with salt and pepper, to taste. Broil for 10 minutes, stirring halfway through cooking time. Remove from oven and allow to cool slightly.
- Add vegetables to a blender along with 1/4 cup water and puree until smooth. Use caution as hot foods release steam which increases pressure. Be sure food is cooled and that blender lid has a vent for steam to escape.
- Place the chicken in a 6 quart slow cooker, season with salt and pepper. Pour poblano sauce all over chicken. Cover with a lid and cook on low for 8 hours.
- Using two forks, pull chicken apart to shred. This can be done in the slow cooker.
- Enjoy chicken in tacos, on top of salads or in sandwiches!
Notes
This tastes great with a fresh squeeze of lime too. So go ahead and buy a few when you buy the other ingredients!
My 17 y old crock pot is blue. What color is your 12 y old one? I see it’s not in any photos! I’m so excited to try this ‘default meat’ dish!
Ha! That’s awesome! My is somehow still white. My dad bought it for me! It’s got one knob – warm, low, medium, high – and that’s the only control it’s got. I love it! 🙂
