Cantaloupe Berry Salad with Mint and Lime

Of course you can always enjoy fresh summer fruit just as it is. Because I think we can all agree that it’s pure deliciousness. BUT, if you’re looking for a fun way to switch things up, this salad is it!

Ingredient Stuff

  • Cantaloupe A medium cantaloupe is about the size one of those small foam balls from gradeschool gym class. I know you know what I’m talking about. 🙂 But any size will work. Just use however you much you want. Measurement here isn’t a big deal.
  • Strawberries I like to slice these into rounds, but if that’s not what you’re into, feel free to quarter or stem them and leave them whole!
  • Blueberries It’s pretty fun to look at the inside of a blueberry. If you’ve got a second, slice a few in half horizontally, just for entertainment purposes.
  • Mint So I’m kind of obsessed with fresh mint at the moment. If you aren’t, no problem, you can skip it or replace it with another herb that rocks your world.
  • Lime A little splash of acid is a bright touch to this sweet dish. It’s all about balance people!
  • Sea Salt Salt brings out the flavor of food. Just a pinch here is all you need. And I like sea salt because the texture is just so fun!
  • Honey Speaking of balance, none of these fruits is super sweet, so a little touch of honey is just a treat! Pick a tasty honey that has floral notes!

Tips and Other Ideas

  1. Mix it up! Feel free to use any fruit you have on hand for this! Most combos would be lovely!
  2. Scared to pick a cantaloupe? Don’t be! Find one that it’s mostly tan/peach on the outside (no green) without any dents, soft spots or bruises. It should be heavy for it’s size and when you smell it, it should smell like a yummy cantaloupe and not well, nothing.
  3. I always take fresh berries out of the carton once I get them home. There always seems to be a few in the bunch that are a little funky or juicy – which is bad for the other berries in there. Take them out, then clean out the container (make sure it’s dry) and put the good ones back in.

Ingredients

Scale
  • ½ medium cantaloupe, peeled, seeded & thinly sliced
  • 1 cup blueberries
  • 1 cup strawberries, thinly sliced
  • ½ cup fresh mint, torn
  • 1 teaspoon fresh lime zest
  • 1 tablespoon fresh lime juice
  • ¼ teaspoon sea salt
  • honey, for drizzling

Instructions

  1. Place all of the fruit in a large bowl. Add the mint, lime zest, lime juice and salt and toss to combine.
  2. Portion onto plates and drizzle with honey as desired.
