I love most fruit. Not really surprising there. But berries have a special place in my heart. Maybe because they are so incredibly beautiful and fragile. Or maybe it’s because when they’re ripe, they’re just pure fabuloulness! And after I’ve filled my belly with them in their whole form, I like to turn the extra into these Berry Crumble Bars!
Do you have big salad dreams? Maybe not, but I do! In fact, I pretty much daydream about food all day. But I’m weird like that. A recent salad daydream became reality! I had just scored some yummy peaches and strawberries and was determined to find a way to use them. Salad? Yes! Strawberry Peach Spinach Salad, to be exact!
Sometimes I need change. It’s not that I don’t love regular, plain-old pancakes. I do. But there’s just something magical and fun about trying something new! So when a bag of pistachios was glaring at me in my pantry, I knew I needed to do something about it. I grabbed those pistachios and created something I like to call Pistachio Strawberry Pancakes.

It’s probably not too shocking to hear that I love salads. But, let me clarify, I like salads that have lots of flavor and that satisfy. So if I’m building a salad, rest assured that it will taste good, be nutritious and leave you feeling content – like a happy little rabbit. Guaranteed then, that this Spinach Salad with Macerated Strawberry dressing will leave your little white tail twitching with joy.
