Think those fancy Buddha bowls you get at restaurants can’t be made at home? Think again! I’ve created this Easy Southwest Buddha Bowl with YOU in mind. This is a bowl meal that comes together quickly to provide you a nourishing lunch or dinner!
Holiday parties are the best!!! Or are they? Hmmmm, as I get older, I’m just not so sure. All of those strategically-placed ingredients on demitasse spoons and fancy mixed drinks served by handle-bar mustache, suspender-wearing bar tenders, leave me exhausted. I don’t want fancy, I want delicious! Don’t you? That’s why I created this simple appetizer for Avocado Pomegranate Toastettes that look pretty and taste great. I’ll leave the drinks and bar tenders up to you!
Do you love eggs in the morning? Me too! But how often do you find yourself wishing eggs were easier to make? Sure, you’ve scrambled and poached them, but I’ve got a recipe for cooking eggs that’s faster, requires less hands-on time and isn’t messy! What is is?! Why, Simple Baked Eggs with Spinach and Salsa!
Fancy a few superfoods? Well, then you need this Chickpea Turmeric Quinoa Bowl!
When you’re a food that’s lumped in the category of “super foods,” you must feel pretty fantastic. There’s likely plenty of publicity and notoriety along with hoards of people flocking to get your autograph. Ok, maybe it’s not quite like that, but I sure love the idea of food celebrities, don’t you? Kale and blueberries slipping into limos while shielding their eyes from the flash bulbs of the paparazzi. Fun!
I like toast, I really do. Why do I love it? Because it’s the perfect platform for so many other nourishing foods. And when I’m encouraging people to try new foods (such as beans), I love to incorporate something familiar. Enter toast.
Cauliflower is having a moment right now.
Some may argue it’s moment is over, but not me. Never one to shy away from a culinary or food trend, I wanted to give the roasted cauliflower “steak” a try. Well, so here’s the thing about me, I am NOT patient. Not one little bit. So all of that fuss of carefully and perfectly slicing that cauliflower and then to have millions (exaggeration) of pieces of cauliflower fall off – well, it just frustrated the crust out of me!
Happy Fourth Of July!
In honor of this awesome day, I am sharing a recipe inspired by a recent conversation with my husband. Here’s the backstory on why I created these Red, White and Blue Crispy Rice Treats.
Shame on Me!
Who starts a blog post like that? Oh, I do! Why? Because I’m feeling a little bit like a slacker dietitian, because…well…because I’ve NEVER made overnight oats. Nope, never have. I know, crazy, right? Overnight oats are everywhere and everyone claims they’re awesome. They always look tasty, but I’ve never tried them. When I heard that this month’s Recipe Redux theme was to try a fellow Redux-er’s recipe, I knew I had to try Amber’s Blueberry-Walnut Overnight Oats as my overnight oats “guinea pig.”
Spinach + Macerated Strawberries = Yummy Salad
It’s probably not too shocking to hear that I love salads. But, let me clarify, I like salads that have lots of flavor and that satisfy. So if I’m building a salad, rest assured that it will taste good, be nutritious and leave you feeling content – like a happy little rabbit. Guaranteed then, that this Spinach Salad with Macerated Strawberry dressing will leave your little white tail twitching with joy.
Fertility Friday + Smoothies
That’s right, you read that correctly, I said “Fertility Friday + Smoothies!” A random pairing? Of course not, I do everything with intention…ok, well almost everything.
Today for Fertility Friday I would like to focus on the amazing nutritional power of smoothies. Yes, I know that people are crazy about smoothies these days. They make their own, they buy the fancy one that costs 10 dollars and they insist on having them every morning for their “bowl” breakfast. But this is one trend where you can believe the hype…at least to a certain extent.
